OK I'm making a triple batch of peanutbutter cookies. I used the eggs as recently as Sunday and the date is May 11 so I'm not really worried worried. Anyhow the 3rd (and final)one I cracked (the clear part) looked whiter and the yolk smaller than the others. OK so I used it anyhow, and mixed the eggs and vanilla then added it and as I'm stirring notice alot of those white stringy eggy stuff. Do you think the eggs are OK? I made the same thing Sunday only one batch though and I did notice it but much less but I also used less eggs. I don't have to make them so I can totally throw them out but I figured someone here might know more about this than me. What do you think?

I'm sure they are fine. I've used eggs even past the date and been fine. A lot of eggs have bacteria in them anyway, but it cooks out when you bake them. I would say go for it! Enjoy your cookies!

the eggs are fine. the white stringy stuff is a natural part of the egg white and a smaller yolk just means the egg is starting to get older however, if there were bacteria in there that werent meant to be there, you would notice real quick by smell. as the egg gets older, it loses water content (thus smaller yolk and white stringy stuff) and has ore oxygen in it but eggs are really hard to convinve to go bad. blue your going to cook them at, if i had to guess, 350 degrees or so so anything in them will die anyways.

personally, i have a really simple way of testing me eggs, and i love it. comes with a cute poem (can we tell i love to bake?)

    If not sure you ought-ter,
    then place it in water.
If it lies on its side,
then it's fresh; eat with pride.

    After three or four days,
    at an angle it lays.
But, it still is a treat,
    so go on and eat.

    Ten days, stands on end,
    in your baking 'twill blend.
    'Cause it's definitely edible,
    in your baking, incredible.

But, if it floats on the surface,
    that egg serves no purpose.
    'Cause a floater's a stinker!
Out the back door best fling 'er!

Ahh eggs... I always worry about what the inside of the egg looks like. I think your cloudy white and small yolk are ok. You'd know by the smell if they were bad. I once cracked open an egg and *** this is a bit gross**** there was a yolk that looked bloody!!! I about gagged. I of course didn't use it, but went and looked up on the internet about it and I guess it's sort of a common thing. I've also found twin yolks and that's supposed to be good luck, just a side track!

How nice are you bringing in cookies!!!!!
