Mayo in those little packets

You know sometimes when you buy a sandwich or something you can get Mayonaisse in those little packets...do those ever go bad? If so how can you tell?

I'm sure they do go bad but as they often don't have use-by dates, you can't tell. I suppose if it looks like an odd colour, consistency or tastes the slightest bit odd, throw it out! I never use them packets of sauce myself... too paranoid...
