You can't use fresh, raw pineapple or its juice with gelatin. It won't set! The pineapple contains an enzyme called bromelain that interferes with the setting power of gelatin. Canned pineapple/juice can be used because is heated as part of the canning process, which denatures the bromelain, and helps it to play well with the gelatin. (Or you could heat your fresh pineapple or juice to at least 158 F to get it to work.). Pineapple isn't the only food that will work against gelatin. Give it a Google. Pretty cool stuff. :)
