    This morning my mother cooked vegetables (onion, celery, mushrooms) to be made with stuffing fora thanksgiving dinner tonight. The cooked vegetables stayed out for several hours by themselves and then were re-cooked with the (bread part of the) stuffing.

    Any potential problems? I keep panicking over the thought of fp* because leaving anything out really worries me. But they were re-cooked, so...?

    Vegetables left out are fine...don't worry.

    It's only certain meat that can't be re cooked. Veg is fine.

    Potatoes and onions are the perfect vggies to grow bacteria in because
    of their ph balance not too acidic and not to basic. How many hours
    were they out for? As long as it was less than four you will be fine.
    Your best bet it to make sure when they are re-cooked to cook them to
    at least 165* or they could potientally cause problems. I made the same
    stuff mix and I cooked them, left them out for an hour to cool, and
    then stuck mine in the fridge. I dont think you have much to worry
    about. Just think of all the people who don't cook or handle or cool
    food right and they dont always get sick. But you will be fine. In my
    food safety and sanitation classes we learned that most people who are
    "sick" over the holidays, its usually from food poisioing which can
    show up anywhere from 6 hours to 5 days after ingesting the food. But
    that always makes me glad because then we know its not all sv*!!!!
